Toasted Boudain Wrap

I came up with this one afternoon while looking for something to go with my  ~beer~ for lunch.

Heat a link or two of boudain, cut the casing, scrap the boudain into a large flour tortilla. Add some shredded pepperjack cheese, form it into a wrap, and toast in a cast iron skillet.

I'm still experimenting with adding other ingredients. Shrimp worked pretty good.

But this sounds quick and simple with endless flavors  ~c~ ~c~

I dated a nurse from down that way for a while and learned a lot from her. I'd pretty much forgotten about boudain until our staff get together at Guntersville (Snowmageddon). Fogy brought some of the best boudain I think I've ever had.  ~c~
I've ordered online a couple times, but now the Bluefield Walmart sells Zummo's Boudain. It's not anything like what Ron brought. But any boudain is better than no boudain. I'm going try my hand at making boudain balls sometime... As I recall it was pretty simple.

Boudain- rice, pork, peppers, onion, celery, spice. I believe that's what Grandma put into her recipe. Oh Yeah, I think she used pig squeal also. Po' Folk eatin'. She chopped it all up together and didn't worry if it wasn't all the same size. Darn good eatin'. I think she used blood as a binder for the sausage. Handmade and hand stuffed.

Toasted Boudain wrap deluxe is a perfect lunch after moving an ass  dragger of snow!

Boudain, sweet peppers, onions, bacon, and pepper jack cheese.
