I was told I should stay using only gapless plugs on my old 1995 Merc. Any idea why?

I always use what the manufacturer specifies/recommends. Gapless plugs are less prone to pre-ignition and supposedly reduce overheating risks.

They never need to be gapped, take them out of the box put em in and go. Regular plugs should be checked before installing them, while the motor will most likely run you may not get be getting the best performance/mileage that should, only takes a few seconds.
