7 pound boneless prime rib:



The marinate:



The 22 hour wait starts:



This time tomorrow I will accept nothing but absolute perfection out of myself. Keep in mind I'm praying like a mother too. Otherwise this will be an expensive oops

That looks great. The photo reminds me of Nam. We "appropriated" a box of steaks off of General Stillwell's jeep and cooked them just like you're doing.

Tony's Creole
Crush garlic

I did a little salt too. I did a 8/1 ratio on sour cream to horseradish and Tony's to taste.

missing the asiago-roasted garlic mashed potatoes...

very simple: a potato for every mouth, plus one more potato

scrub russet potatoes until 'golden' (use green scratch pad)
cut to chunks, boil with a bit of salt until fully cooked/soft
drain water, with electric mixer, 'mash' potatoes until fluffy... add butter (land o lakes unsalted, one stick or two)
Mix... add milk... mix to desired consistency...

Whip (turn up speed and blend till smooth).  Add a 1/4 tsp roasted garlic  - blend in.  Salt to tast.
Last, before serving, add shaved Asiago (or parmesan) and fold in...

Best advise I was ever given by an ex girlfriend:  mashed potatoes should be awesome all on their own without gravy...   this does just that.

think I'll try that prime rib thing...  great post!
