motor and jack plate height on 1988 18ft.10inches nitro bass boat

 i have a 1988 18ft 10inch single console bass boat with a 6 inch manual jack plate,200 yahama with a 25 pitch 3 blade prop. the motor is 3 inches below the bottom of the boat now. the hole shot is not to bad when i run solo(on pad at 2500rpm)but with 200 more pounds it takes 3200 rpm and twice as long to get on pad.need advise to improve preformance of boat. boat runs 62mph at 4800 rpm can't get more rpm.
